Besides wearing green, decorating with shamrocks, and planning an Irish-themed get-together, you might want to celebrate St. Patrick’s Day by making a traditional Irish recipe.

Beef and Guinness stout pie is a hearty, crowd-pleasing dish that captures the essence of March break. But if you’ve never made this delicious dish, you don’t need the luck of the Irish to achieve perfect results. As the name suggests, beef and Guinness stout pie consists of beef with a pie-like crust. Boudewijn explained what to expect from the delicious Irish treat.

“Beef and Stout pie is one of my favorite comfort foods any time of year, but since it’s a traditional Irish dish, it’s especially appropriate to make in late winter, around St. Patrick’s Day,” she said. “This delicious pot pie, similar to the American pot pie, dutch oven and covered with a pastry. It is usually served in a single pot but can be adapted to make individual servings.

Serving veal with vegetables in pastries with rich broth or sauce is not a new idea. This drink, thought to have ancient origins, became popular in Britain hundreds of years ago.

The Irish version typically includes beef, potatoes, carrots and onions cooked in the classic Irish Guinness sauce with herbs and spices. Guinness stout is a traditional favorite, although other stouts can also be used. In fact, this delicacy is often simply called “Guinness Pie.”

“Grab a Guinness or your favorite Irish stout and have fun putting together this delicious, flavorful Irish beef and stout pie,” Boudewijn said, adding a few tips for perfect results. “Give yourself a few hours for preparation and cooking. If you’re making it for dinner, you’ll want to start around noon. Enjoy it any time of year, especially when you want to celebrate the Irish people in your life on St. Patrick’s Day.”

Beef and Guinness Pie

This Guinness deep dish pie recipe is sure to impress, especially when serving a special meal on St. Patrick’s Day. Boudewijn explained what to expect when preparing the meal for 10 people.

“For this pie, you’re going to make two pie crusts and a thick stovetop casserole that will go between those crusts and seal them in,” he said, adding that an alternative method could be used. “Another way to serve this is to place the finished casserole in a bowl and top with baked rounds cut to the size of your serving bowls (simply roll out your dough, invert the bowls over the crust, and cut them out with a knife).”

7 tablespoons of olive oil

12 ounces white button mushrooms, quartered

1 1/2 cups frozen shallots, thawed

Salt and freshly ground black pepper to taste

3 1/2 pounds beef roast, cut into 1-inch cubes

1 cup all-purpose flour

3 cloves garlic, minced

2 tablespoons tomato paste

2 1/4 cups Guinness Irish Stout

1 cup of broth

1 pound carrots, cut into thick pieces

12 ounces red potatoes, cut into large dice

1 tablespoon fresh thyme leaves

2 pre-made cake pastries

1 egg, beaten

Method:

  1. Start with your largest Dutch oven (6 quarts or more—you’ll need room to stir in all the veggies) and add about a tablespoon of olive oil, mushrooms, onion, salt, and pepper over medium heat. Stir them occasionally and cook for about 12 minutes, then transfer everything to a bowl to rest.
  2. Salt and pepper your beef well, then dredge it in flour and shake off the excess. Add more olive oil to the Dutch oven and over medium-high heat, add the beef cubes and brown on all sides. Transfer to: stone to relax. Add 1/2 cup of water to the casserole dish and deglaze, scraping up any brown sugar from the bottom. It may be easier to do this in two or three batches; Make sure the beef has room to brown and deglaze each batch after browning.
  3. Still over medium-high heat, add the garlic and tomato paste and cook for about a minute, stirring constantly to prevent the garlic from burning. Add the beef, Guinness, broth and reserved liquid and stir to cool. Add mushrooms, onions, carrots, potatoes and thyme and boil gently. Reduce the heat to low, cover and simmer for about three hours (until the beef and vegetables are tender).
  4. Preheat the oven to 400 degrees.
  5. Thaw and assemble the pie pastry to form a large 16-inch round, or at least large enough to place on top of the Dutch oven, allowing a 1-inch overhang. Seal the edges of the dough; the dough will fall onto the filling.
  6. Cut three small slits in the center of the dough and bake for 30 minutes, then let it rest for 10 to 20 minutes.
  7. Serve hot (with a glass of Guinness, of course).
